Leek & Bacon Quiche

250 grams shortcrust pastry
200 grams bacon -- cut into lardons
2 leeks -- washed & chopped
6 eggs -- beaten
250 mls cream
chopped parsley
ground black pepper

Line at 20cm (8") deep flan dish with the pastry, cover with a sheet of paper weighted with baking beans or rice and bake at 190oC for about 12 minutes, remove the paper and return to the oven for a further 3-5 minutes.

Heat a frying pan and 'dry fry' the bacon, when it has begun to render the fat add the leeks and stir fry until the leeks are soft.

Combine the eggs, cream, leeks and bacon, it should not require salt, add black pepper and parsley.

Carefully pour the savoury custard into the part baked pastry case and return to the oven for about 15-20 minutes until the filling is cooked.
