Basic Burgers

300 grams lean minced beef, 5% fat
1 onion
1 teaspoon thyme leaves, dried
1 tablespoon olive oil
10 grams butter
salt and pepper

Put the butter and oil in a frying pan over a medium heat.

Chop the onion into very small pieces whilst the pan is heating.

Add the onion to the pan and cook until it is soft but not brown, turn down the heat if necessary, stir every couple of minutes. When done put to one side and allow to cool if you are not cooking the burgers immediately.

Put the mince into a bowl and break up into small pieces with a wooden spoon, add a good shake of salt and some black pepper and mix in the herbs.

Add the onion to the mix and with clean hands form into to balls, roughly the size of a tennis ball. Press together well.

Press down onto a board until about 2 cms thick.

Heat a little more oil in the frying pan, when hot add the burgers and DO NOT TOUCH for a couple of minutes, then turn and allow to cook to your taste.

About 2 minutes on each side for medium/rare; 3-4 minutes for well done (brown all the way through)

Serving Ideas : Serve in a toasted bun, with fries, side salad, ketchup, fried onions
