Beef Bourguignon

180 grams bourguignon beef -- diced
2 medium carrots -- peeled and cut into 1" dice
3 medium potatoes -- peeled and cut into 1" dice
12 baby onions -- scalded and peeled
250 mls beef stock
180 mls red wine
bouquet garni of 6 juniper berries, 2 bay leaves and a few sprigs of thyme
30 grams flour
30 grams butter -- softened
salt and pepper.

Place the beef in a saucepan with the bouquet garni, wine and stock, bring to almost simmering point and allow to cook for at least 2 hours or until the beef is tender. Remove from heat and set aside until cool. 

Refrigerate and skim any fat from the stock and remove bouquet garni.

Add the prepared vegetables and simmer until vegetables are cooked. Stir in the butter and flour which have been blended together and simmer until slightly thickened.

Check seasoning and serve.
