Breakfast Bruschetta

1 2.5 cm thick slice of bread from an uncut loaf
2 medium tomatoes
1 egg
2 thick rashers bacon
basil leaves
olive oil
vinegar

Put a pan of water, with about a tablespoon of vinegar added, on the cooker to heat up.

Wash and dry the tomatoes and chop up discarding the cores.

Chop the basil and mix with the tomatoes adding salt and pepper

Grill the bacon until crispy and toast the bread.

When the bacon is cooked and crispy chop up and add to the tomatoes.

The water should now be boiling, stir the water to create a whirlpool and drop in the egg to poach.

Brush the toast lightly with olive oil and top with the tomato and bacon mixture.

Keep warm under the grill until the egg is cooked. Add egg to toast.
