Bubble & Squeak

375 grams potato, floury type -- peeled and cubed
125 grams cabbage -- shredded and washed
60 grams spring onions -- chopped
100 grams bacon -- finely chopped
40 grams butter
2 tablespoons cream
salt & pepper
extra melted butter (optional)

Put potatoes into a medium saucepan, bring to boil, salt lightly and simmer for 15-20 minutes until tender. Drain well and mash thoroughly with the butter and cream making sure there are no lumps.

Bring a separate pan of water to the boil and add the cabbage, simmer until tender but not soft, about 10 minutes, it should still have a slight crunch. Drain and plunge into cold water to prevent any further cooking and set the colour.

Heat a frying pan and 'dry fry' the bacon until crisp, remove from pan and add the spring onions to cook slightly in the rendered fat from the bacon.

Combine all the ingredients thoroughly in a bowl. Shape into patties the size of your choice.*

Brush with a little melted butter (optional) and bake at 220oC for 20 to 30 minutes until golden brown and slightly crisp.

* may be prepared ahead to this point and frozen or will wait refrigerated for several hours
