Savoury Buckwheat Pancakes

100 grams buckwheat flour -- sieved
2 medium eggs -- beaten
300 mls milk
1/2 teaspoon salt
1 tablespoon olive oil

Put the flour into a large bowl with the salt.

Blend in the beaten eggs, olive oil and milk until the mixture is smooth.

Cover the bowl and allow to stand for 2 hours before frying in a lightly buttered pan.
