Butter Log

One pack of butter.
An equal amount of Mango puree (sold in tins, Sainsburys sell it).
A handful of chopped herb, chopped finely (any of the 'punchy' soft leafed ones,
mint, coriander etc.).
Juice of one lime (this is up to you really, lemon juice, a drop of wine would
work- even a drop of water.)
1 teaspoon of spice (cinnamon, or nutmeg, or cayenne- you get the idea).
Method.
Ensure that the butter is softened, combine with all the other ingredients until
distributed. Using foil or cling wrap form the butter into a sausage shape.
Crimp the ends of the foil (it should look like a Christmas cracker). Freeze
until solid. When needed pull it out of the freezer, remove wrap, and slice into
'rounds. Good on fish steaks, just plonk a slice on top of the fish and allow to
melt.
