Char-Grilled Potato Slices ![]()

750 grams potatoes
150 milliliters olive oil
rosemary sprigs
2 bay leaves
thyme sprigs
Maldon sea salt
freshly ground black pepper
Put potatoes, washed but unpeeled into a pan of water and boil for 8-10 minutes.
Remove from heat and allow to cool in the cooking water.
Put the oil and herbs into a separate pan and heat gently until almost boiling, turn off and allow to stand for at least 2 hours.
Strain the herb-infused oil into a small ceramic/glass jug or dish
Slice potatoes lengthways into 1 cm slices, brush lightly with the oil and place over hot charcoal or into a chargrill pan. Allow to cook for 5 minutes, meanwhile baste once, turn and allow to brown. Baste and turn once more on each side.
Sprinkle with salt and pepper before serving.
