Cheese Topped Spinach Rice

500g Fresh Spinach
2 Red Onions – Sliced
2 Fat Cloves of Garlic - crushed
1 Red pepper - Sliced
200g Cooked Rice
1 packet Feta Cheese
Wash the spinach well and roughly chop, wilt in a hot pan, then drain in a
colander.
Fry the onion and garlic until translucent, add the pepper and season. Stir in
the cooked rice, spinach and mix well. Transfer to an oven proof dish. (I tend to
use a oven proof sauté pan for everything, then I don’t have to transfer)
Cut the cheese into cubes and sprinkle over the rice. Pop under the grill until
the cheese is gooey and the dish is steaming.
