Chicken Cesar Salad

2 large handfuls salad leaves of your choice -- washed & dried
6 slices French bread, cut in two
8 anchovies
100 grams lardons
50 grams fresh parmesan -- shaved
200 grams cooked chicken
1 egg
My Favourite Salad Dressing*

Heat a heavy based pan and dry fry the lardons until crispy. Push to one side of the pan and add the bread, turning in rendered oil until brown, it may be necessary to add more olive oil.

Drain bread and bacon on kitchen paper and fill pan with water, bring to the boil.

Place half of the prepared salad dressing in a blender. Poach the egg until the white is just cooked and remove to blender and blend until smooth.

Pour the dressing into a large bowl and add the salad leaves, bacon and bread, toss lightly.

Chop the chicken and anchovies and add to bowl, combine gently .

Top with the shaved cheese.

1/4 cup olive oil
2 tablespoons vinegar, any
6 anchovies
4 cloves garlic, peeled
2 teaspoons wholegrain mustard
black pepper

Blend all the ingredients together.
