Chicken Frango al Alquidar

1 3lb chicken -- cut into pieces
1 pound onions -- very thinly sliced
1/4 pint white wine
2 pints chicken stock
12 ounces 'Uncle Ben's' long grain rice (do not use a cheaper rice, it just isn't as good and the meal comes out too sticky)
olive oil
salt & Pepper

Layer half the raw rice and half the onions over the base of a casserole. Place the chicken pieces on top. 

Cover with the remaining rice and onions.

Pour some olive oil over the chicken (about 2 tablespoons). Add wine and stock. This should nearly cover the chicken so adjust quantities if necessary.

Cook at Gas Mark 4 for 1 1/2 hours - 2 hours.
