Chicken Cooked with Indian Spices & Spinach

4 6-8oz boneless chicken breasts -- cubed
2 onions, large
1 teaspoon turmeric
2 teaspoons ground coriander
1 teaspoon hot chili powder
half a cup creme frâiche
one third bag frozen spinach -- defrosted
half (or more) Scotch bonnet chiles
4 tomatoes -- stalk removed and chopped
6 cloves garlic -- crushed
3" ginger root -- crushed
1 stick cinnamon
3 cloves
3 green cardamoms
2 teaspoons garam masala
salt and pepper
large bunch of coriander -- chopped
juice of one lime
oil for stir frying
Make a marinade with the creme frâiche; chilli powder; coriander powder and turmeric, add chicken cubes and leave for about an hour.
Roast the cinnamon stick; cloves and cardamoms in a 130oC preheated oven and grind to a fine powder in a coffee grinder or pestle and mortar.
Chop one of the onions and cook in about 2 tablespoons of oil until golden brown then add the chicken and marinade and seal the chicken.
Put the spinach, tomatoes, second onion, ginger, garlic, chilli and ground spices into a blender and blend until smooth.
Add to the chicken and onions and allow to simmer for about 20 minutes until the chicken is cooked thoroughly.
Add the garam masala; lime juice; salt and pepper to taste.
Just before serving add the chopped coriander.
