300 grams lean minced beef
1 medium onion -- chopped
3 cloves garlic or a big squeeze of garlic puree -- chopped
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon chilli powder
1 tablespoon tomato puree
1 450g can chopped tomatoes
1 can (smallest) red kidney beans
1 can (smallest sweet corn
salt and pepper
Heat a big frying pan, when hot add the mince. Keep stirring until the mince is brown all over.
Add the onion and garlic, cook for a couple of minutes.
Add all the herbs and spices and the salt and pepper.
Add the tomatoes.
Turn down the heat so the mixture is barely simmering.
Add the beans and corn.
Taste it, add salt and pepper check it tastes right.
Cook for about 20 minutes.
Serve with Jacket Potatoes,
Sour Cream, Grated Cheese
