Chocolate Truffles

50 grams butter -- softened
50 grams caster sugar
100 grams cake crumbs (sponge cake, trifle sponge etc)
50 grams good quality dark chocolate -- melted
50 grams ground almonds
1 tablespoon Grand Marnier or other liqueur optional
cocoa powder to dust

Cream the butter and sugar together until light and fluffy.

Add the cake crumbs and almonds and blend together well.

Add the melted chocolate and liqueur if using.

Divide into 24 onto a sheet of non-stick paper and shape into balls.

Roll in the cocoa powder twice.

Store in the refrigerator.
