Cocktail Provençal Tomatoes

16 cocktail tomatoes, about 1 1/4" diameter
4 slices white bread
2 tablespoons flat leaf parsley -- chopped
2 cloves garlic -- very finely chopped
olive oil
salt & black pepper
Cut the top off the tomatoes, stalk end. Carefully scoop out seeds and juice. Leave to stand upside down on kitchen paper to drain whilst preparing the filling.
Cut the bread into cubes and process to crumbs in a food processor.
Mix the garlic and parsley with the breadcrumbs and season.
Drizzle in some olive oil and stuff the tomatoes.
Place in an oven proof dish and bake at 160oC for about 12 minutes, serve hot or warm.
