Char Grilled Cod & Red Salsa

2 cod fillets, skin on
1/2 red pepper -- peeled & seeded
1 large tomato -- peeled & seeded
1/2 large red onion
1 clove garlic
2 tablespoons balsamic vinegar
2 tablespoons basil -- chopped
very good quality olive oil
salt & black pepper
Chop the onion finely and fry, with the garlic, in a little olive oil until soft but not coloured. Chop the pepper into similar sized pieces and add to pan.
Chop and add the tomato with the vinegar, season and allow to cook gently while
char grilling the fish. Add a little more olive oil and/or vinegar as necessary.
Just before serving stir in the basil.
