Corn Soufflé

3 large eggs -- beaten
5 ears fresh sweet corn, kernels cut off and cobs scraped
3/4 cup light cream
1 tablespoon sugar
1 tablespoon all purpose flour
1/2 teaspoon salt
pinch ground nutmeg
1 tablespoon unsalted butter

Preheat oven to 375oF (190oC Gas Mark 4)

In a large bowl stir together the eggs, corn, cream, sugar, flour, salt and nutmeg.

Put the butter in an 8" square baking tin and place in the oven until the butter melts.

Remove the pan and swirl the butter making sure the bottom of the tin is coated.

pour in the batter and bake for about 25-30 minutes until a skewer inserted comes out clean.
