Cranberry Orange Bread

8 ounces plain flour
1 tablespoon baking powder
pinch of salt
4 ounces granulated sugar
2 eggs
grated zest of one orange
4 fluid ounces orange juice
2 ounces chopped walnuts
6 ounces cranberries (thawed if frozen)
2 1/2 ounces butter, melted, plus extra for greasing

Preheat oven to 350oF (180oC Gas Mark 4). Grease and line a 2 lb loaf tin.

Sift the flour, baking powder and salt in a bowl, stir in the sugar and make a well in the centre.

Beat the eggs with the orange zest and juice and pour into the well of dry ingredients.

Blend together but do not overbeat the batter.

Stir in the walnuts, cranberries and melted butter. (Folding gently so as not to squash the berries)

Pour into the prepared tins and bake for 50 minutes.

Remove from the tin and place on a rack to cool.

When completely cool wrap in cling film and store for at least 24 hours before serving.
