Crumpets

1 pound plain flour
1/2 pint milk
1/2 pint water -- just off the boil
1/2 ounce fresh yeast
1 teaspoon salt
1 teaspoon sugar

Cream the yeast with the sugar, combine the milk and water, it should be around blood heat and add to the yeast.

Sieve the flour and salt together in a large bowl and gradually add the yeast liquid and stir until a smooth batter forms. Cover and leave to stand for about an hour or until doubled in size.

Heat a large non-stick frying pan and add a little butter. Using well buttered metal rings to get a good shape pour about 1/4 cup (2 fluid ounces) of the batter into each and cook over a low to medium heat until holes appear on the surface. 

Ease the rings off the crumpets and flip onto the side with holes for a minute to finish cooking.

If you wish to serve immediately then cook until golden brown and crisp, otherwise allow for extra toasting time.
