Curry Gravy

1 onion -- chopped
3 cloves garlic -- finely chopped
2 inches ginger -- chopped
1 teaspoon, each of fennel seeds, cumin seeds, fenugreek seeds, coriander seeds -- ground together to a powder
3 teaspoons garam masala
1/2 teaspoon chilli powder
1 400 gram can tomatoes
1 tablespoon cream
oil for frying
In a heavy bottomed frying pan cook the onions slowly until softened but not browned. Add all the spices, the ginger and garlic.
Add the tomatoes and cook gently for about 10 minutes.
Put the mixture into a food processor or process with a hand-held blender.
Check the seasoning and add the cream. Cook a little longer to reduce if the sauce is too thin.
