Curry Puffs

160 grams lean minced beef or lamb
1 small onion
2 cloves garlic
2 inches fresh ginger
sliver scotch bonnet chilli
1 teaspoon each ground cumin, ground coriander & garam masala
460 grams thinly rolled puff pastry
1 tablespoon coriander leaves
squeeze lime juice
1 egg -- beaten
milk to seal
Put the onion, garlic, ginger and chilli into a food processor and chop finely.
Heat a heavy bottomed frying pan and brown well. When the fat renders from the meat add the contents of the food processor and cook gently for 4-5 minutes.
Add the spices, lime juice, salt and pepper and combine.
Leave to cool.
Roll the pastry into 16 3" circles.
Place a scant teaspoon of the filling onto each.
Fold over into mini pasties, alternatively use a mini-pasty maker for a neat result.
Brush with beaten egg and bake at 220oC for 10 minutes.
