Dinde a la Girolle

 140g turkey escalopes
1 large shallot -- finely chopped
3 cloves garlic -- finely chopped
125 grams Girolle or chanterelle mushrooms -- chopped
1/2 bunch flat leaf parsley -- chopped
4 slices jambon de savoie (or parma ham or ham of choice)
oil and butter for frying
salt and pepper
nutmeg

Set oven at 200oC. Gently sauté the shallot and garlic in butter and oil until soft but not coloured. Add the mushrooms, cook for 7-9 minutes until the mushrooms are almost cooked. Add the parsley. Season to taste. Add freshly grated nutmeg and combine thoroughly.

Divide the mixture into two equal portions and spread on the turkey escalopes. roll firmly. Lay two pieces of ham on a board and wrap the escalope fairly tightly and place in baking dish. Repeat with the second turkey escalope. Bake for approximately 15-20 minutes until the juice runs clear when pierced with a knife.
