Drambuie & Orange
Crême Brulée

6 egg yolks
2 tablespoons caster sugar
2 tablespoons Drambuie
25 centiliters Cream
grated rind from an untreated orange
extra sugar
Whisk the egg yolks and caster sugar over a pan of boiling water until they thicken and begin to cook, take care not to let the eggs 'scramble'
Add the Drambuie, orange rind and cream, the mixture should be the consistency of fairly thick custard.
Pour into shallow wide dishes and refrigerate for at least 2 hours.
When ready to serve sprinkle on the extra sugar and caramelise under a pre-heated grill or with a blow torch.
