Easy Fish Pie

2 large Potatoes -- peeled and cubed
1 tablespoon butter
2 tablespoons cream1
1 200g fillet smoked haddock (no skin)
1 200g fillet cod or haddock (no skin)
8 fl oz cream
2 ounces cheese -- grated
4 ounces frozen spinach
chopped parsley
salt and pepper

Set oven to 180oC.

Put potatoes in a pan, cover with water, add about half a teaspoon of salt. Bring to boil, turn down and simmer for 20 minutes.

Drain in a colander, add the tablespoon of butter and cream. Mash thoroughly (or use electric mixer).

Check the fish to make sure it has no bones, pull out any you can see. 

Put cream into a pan, bring to boil, turn off the heat and add the grated cheese and salt and pepper. Stir until the cheese has melted.

Put the fish, frozen spinach (is using), parsley (if using) into an ovenproof dish. 

Pour over the cheese sauce.

Carefully spoon the potato onto the fish in with a tablespoon.

Cook in the oven for about 20 minutes, the top of the potato will be golden brown and the fish cooked.
