Easy Lemon flan

4 ounces digestive biscuits -- made into crumbs
2 ounces butter -- melted
5 fluid ounces double cream
6 fluid ounces sweetened condensed milk
2 large unwaxed lemons -- juiced & rind finely grated

Combine the biscuit crumbs and melted butter, put into a lined and greased 7 inch pie dish or flan ring, press evenly into the sides and base. Leave to cool and firm up in refrigerator for 30 minutes.

Mix together cream, condensed milk and lemon rind. Gradually add the lemon juice and mix thoroughly until it thickens. 

Pour over the crumb case, smooth the top, then put back into the refrigerator to completely chill through and firm up. At least 4 hours, longer is better. 

When ready to serve, remove from dish, carefully take off the lining paper and place on a pretty serving plate.
