2 large skinless & boneless chicken breasts
2 teaspoons ground cumin
2 teasppons paprika
2 cloves garlic -- OR
2 teaspoons garlic powder
1 teaspon chilli powder (optional)
2 teaspoons dried oregano
2 tablespoons chopped coriander leaves (fresh or frozen)
juice of 1 lime -- OR
3 tablespoons lime juice (bottled)
2 tablespoons oil, preferably olive
1 large onion
1 small capsicum (bell pepper)
1 packet ready made flour tortillas
extra oil for frying
Cut the chicken into strips about 1cm thick, place in a bowl with all the spices, the lime juice and oil. Cover and allow to marinate for at least an hour at room temperature or up to 24 hours in the refrigerator.
Cut the onion & pepper into thin slices.
Heat the oil in a large frying pan and cook the chicken over a high heat. When done keep hot. In the same pan quickly fry the vegetables.
Reheat the tortillas according to the manufacturers instructions.
Place a couple of tablespoons of the chicken strips in the centre of a tortilla, add a tablespoon of vegetables plus any other accompaniments and roll.
