Fast Pasta

240 grams plain flour (bread flour or type 65)
2 eggs, 55-65 grams -- beaten (plus extra yolks if necessary)
salt

Put the flour into a food processor, add salt and eggs and process until the mixture resembles fine breadcrumbs. Add extra egg yolk(s) one at a time at this point until the mixture begins to form a mass.

Turn out on to a large board and press together and knead until a pliable dough forms.

Wrap and refrigerate for at least 30 minutes.

When ready to use divide into four and roll - either manually or through a pasta machine and dry or use as required.

NB: fresh pasta cooks in 2-3 minutes.
