Fish n'Chips

200 grams firm white fish -- cut into 1" cubes
1 large potato
3 tablespoons self raising flour
beer or sparkling water
salt & pepper
oil to fry
Peel the potato and cut into matchstick size pieces.
Sieve the flour into a bowl and bend with enough well chilled beer or water to make a fairly thick batter.
Fry the potato matchsticks until crisp, keep warm on absorbent paper.
Dip the fish cubes in the batter and fry until crisp, 2-3 minutes maximum, drain on absorbent paper.
Serve the fish n'chips in mini paper cake cases immediately.
