3 Fish Pie

300 grams smoked haddock fillet
300 grams cod fillet
300 grams salmon fillet
250 milliliters double cream
80 grams strong cheese -- grated
150 grams spinach -- washed & de-veined
1/2 teaspoon English mustard powder
1 egg
3 tablespoons cream extra
2 tablespoons flat leaf parsley -- chopped
750 grams potato -- peeled and cubed

Boil the potatoes in lightly salted water for about 20 minutes until tender.

While the potatoes are cooking remove any traces of skin and bone from the fish and cut into 5 cm pieces. put into a n oven proof dish.

Coarsely chop the spinach and put into a colander, pour over a couple of kettles of boiling water to wilt, allow to cool and add to the fish.

Put the cream into a pan and bring almost to boiling point, add the cheese, seasoning and dry mustard. Turn off the heat and stir until the cheese has melted, add the parsley. If cooking the pie immediately pour over the fish, if preparing ahead allow to cool completely before adding to the fish.

The potatoes should now be tender, drain and mash with the egg and cream making sure there are no lumps whatsoever.

Pipe or spoon over the fish mixture in the ovenproof dish.

Bake at 180C for between 20 - 45 minutes depending on depth of dish and thickness of fish, the top should be golden and fish cooked.
