Beetroot in Ginger Syrup

10 beetroot
1/2 cup white vinegar
3 cups sugar
1 cup water
2 tablespoons grated ginger
2 teaspoons grated lemon rind
1/4 cup lemon juice
1 teaspoon orange rind
1/4 cup orange juice
2 green shallots -- chopped

Boil or steam beetroot until tender; drain, peel, cut into quarters if large.

Combine vinegar, sugar, water, ginger, rinds and juices in pan. Stir over heat without boiling until sugar is dissolved.

Add beetroot and simmer gently for about 10 minutes; cool
Serve sprinkled with shallots.
