Goat Cheese & Parma Ham Ravioli

1/2 quantity fast pasta dough
125 grams goat cheese -- rind removed
1 tablespoon ricotta cheese
2 slices Parma ham -- chopped finely
6 semi dried tomatoes, in oil -- chopped finely
small hand full basil leaves -- finely shredded

Break up the goat cheese into a bowl and add the ricotta. Work to a paste with a wooden spoon until a uniform cream forms.

Add the other ingredients and blend very well.

Set aside.

Roll out the pasta dough thinly, pasta machine is best for this.

Either place teaspoons of the filling all over half the rolled dough. Using a pastry brush spread water between the piles and press down, cut out with pastry cutter, knife, cutting wheel whatever.

Alternately lay a sheet of pasta over a ravioli tray, add filling and add another sheet.

Allow to stand for at least an hour.

Fill a large pan with water and bring to boil. Add pasta, remove when it reaches the surface, drain well, add a large knob of butter and shaved parmesan.
