Goats' Cheese & Slow Roast Tomato Pancakes

16 cherry tomatoes, on the vine if possible
2 buckwheat pancakes
50 grams goats' cheese -- cut into 1/4" slices
2 anchovies
1 teaspoon tomato puree
2 sun dried tomatoes (packed in oil)
4 teaspoons of the oil from jar of tomatoes
2 tablespoons balsamic vinegar
2 tablespoons water
dash of lime juice
dash of tabasco sauce
Roast the tomatoes at 130oC for an hour and allow to cool, remove from the stems.
Put the anchovies, tomato puree, sun dried tomatoes, oil, vinegar and water into a food processor and blend until smooth. Season to taste with the tabasco and lime juice.
Reheat (or make) the pancakes and keep warm.
Lightly grill the goats' cheese.
Spread the pancakes with dressing and add the cheese and tomatoes, spread another thin layer of the dressing on the pancakes and fold again.
Serve as an entree with a salad of rocket leaves dressed with walnut oil.
