Guacamole

1 small ripe avocado
1 clove garlic
1 spring onion or 1/4 red onion
squeeze lime juice
1 chilli or dash of tabasco
1 tomato -- skinned
fresh coriander
black pepper

Remove the skin from the tomato by putting in a bowl and cover with boiling water. Stand for one minute then put into cold water. The skin will peel off easily. 

Put the tomato and all the other ingredients into a processor and blend until almost smooth.
