Guinea Fowl 'Olive'

1 large skinless & boneless guinea fowl breast
40 grams peeled shallot -- finely chopped
50 grams bacon -- finely chopped
1 slice bread -- processed to crumbs
1/4 apple -- peeled & grated
butter & olive oil

Heat a heavy bottomed pan and fry the bacon until the fat renders it begins to brown. Add a little butter and olive oil then add the shallot, breadcrumbs and apple. Cook until shallot softens and remove from the heat. Cool.

Place the guinea fowl breast between sheets of cling film and bash until a consistent thickness.

Lay guinea fowl on a sheet of foil, spread with the prepared stuffing. Roll tightly and wrap in foil.

Cook at 180oC for 20-25 minutes.
