Smoked Haddock with Mustard Sauce

2 200 gram smoked haddock fillets, preferably undyed -- skinned & bones removed
250 mls milk
30 grams butter
30 grams flour
60 mls cream
2 teaspoons wholegrain mustard
Poach the haddock in the milk until almost cooked, remove from the poaching liquid and keep warm while preparing the sauce.
In a separate saucepan melt the butter, add the flour and cook for a couple of minutes until the mixture leaves the side of the pan.
Add the milk in which the fish was cooked, stirring all the time. Add the cream and mustard. Check the seasoning and allow to simmer for a minute or two.
Serve.
