1 170 grams tub red pepper hummus
250 grams puff pastry
flour for rolling
10 mild Pappadew piquanté peppers -- drained and cut into 36 pieces
1 heaped teaspoon sesame seeds
vegetable oil for greasing
On a lightly floured surface, roll the pastry out to slightly larger than a 30cm (12") square. Trim, cut into 36 - 5cm (2in) squares, then very lightly knock up the edges with a small, sharp knife to help the rising.
Transfer to lightly oiled baking trays.
Spread the hummus to the edge of the pastries. Place a pepper, skin-side down, on top and sprinkle over a few sesame seeds.
Cover with cling film and freeze.
When ready to serve, bake the pastries from frozen in the upper part of the oven preheated to 200c gas mark 6 for 10-12 minutes until well-risen and golden. Remove with a palette knife. Arrange on a dish and serve.
