Judy's Chocolate Cake

5 ounces caster sugar
12 ounces chocolate
5 ounces unsalted butter
5 large eggs -- separated
1 1/2 ounces flour (any kind)

Preheat oven to 175C.

Butter a 9 inch cake tin.

Combine chocolate, butter and sugar in double boiler. Melt over medium heat, cool slightly then add egg yolks and flour. Beat egg whites until they form firm peaks, and then add one third of the egg whites to the choc mixture and mix. Fold in the rest of the egg white mixture. 

Pour into tin and bake for 30 to 35 minutes. Make sure the cake is JUST cooked and not completely dry in the middle as it should be slightly mousse-like until it cools.
