Chicken Curry Vol au Vents

12 ready baked cocktail vol au vent cases
50 grams roast chicken
2 big tablespoons mayonnaise
1/2 teaspoon curry paste (optional)
1 slice tomato -- taken from bottom
Chop the chicken very finely and put into a small mixing bowl.
Add the mayonnaise and curry paste if using and mix well until it is well combined.
Fill each vol au vent with a small teaspoon of the mixture taking care not to make the edges messy. Wipe away any drips with a new piece of kitchen paper.
Cut the slice of tomato into strips, then into small diamonds.
Top each vol au vent and serve.

Salmon Pinwheels
Serving Size : 12

6 slices brown bread
4 triangles cream cheese (eg Laughing Cow)
80 grams smoked salmon
12 chives
lemon juice
salt & black pepper
Stack 3 of the slices of bread neatly and cut off the crusts.
Lay the 3 slices of bread on a board overlapping slightly and flatten with a rolling pin.
Spread the cheese over the long slice of bread evenly.
Lay the smoked salmon over the cheese evenly, trimming off any excess.
Roll tightly and cut into 6 even sized slices.
Lay on side so it looks a bit like a Swiss roll.
Cut the chives (make sure they are washed) into 2cm pieces and garnish each with a cross of chives.

4 slices wholemeal/brown bread
1 very thin slice lemon
100 grams taramasalata
1 1" approx star cutter
Cut the lemon slice into 4 wedges, cut into 4 wedges again and put to one side.
Cut 16 stars from the bread with the pastry cutter, you will need to press hard to get a 'clean edge'
Spread each star with taramasalata as evenly as you can.
Top with a wedge of lemon.
