Kirsten's Orange Pastry

250 grams plain flour
1 tablespoon corn flour
50 grams ground almonds
pinch salt
80 grams caster sugar
grated zest of one orange
1 egg
1 egg yolk
2 tablespoons brandy
190 grams soft butter -- cut into cubes

Sieve dry ingredients together. Add all others and work gently with a knife and then hands to form a ball. It will be quite soft. Chill for at least 1 hour. Roll and use.

Baking small pies: 200 degrees for 12-15 minutes

Makes the best mince pies ever.
