Lentil & Walnut Pate

2 ounces red lentils
2 ounces walnuts
1 onion -- finely chopped
1 clove garlic -- crushed
1 teaspoon thyme
1 teaspoon yeast extract
1 teaspoon vegetable boullion powder
salt
freshly milled black pepper
1/2 ounce butter
1 teaspoon OIL

In a heavy based pan, fry the onion and garlic in the butter and oil for three minutes. 

Add the lentils and enough water to just cover them. Bring to the boil.

Stir in the yeast extract, vegetable bouillon, thyme and pepper, then simmer gently for 15 minutes with a lid on pan, until lentils are soft and the water has been absorbed. Take off the heat.

Let the lentil mixture cool a little, stir in the ground walnuts and salt to taste. Blend well preferably with a hand blender, pour into a shallow bowl and chill for at least 3 hours.

Garnish with parsley and serve with wholemeal toast, crackers or savoury biscuits.
