'Light' Salad Cream

4 yolks from hard boiled eggs
300 mls single cream
1 tablespoon vinegar (tarragon or cider) or lemon juice
1/2 teaspoon dried English mustard
seasoning of salt, white pepper, cayenne (Tabasco sauce could substitute).

Pound the egg yolks through a fine sieve, then mix the egg, cream, vinegar and mustard together until combined. Don't use a food processor, whisk and bowl method is better- you're looking for a weaker consistency than mayonnaise in this instance. Check the mix then add the seasonings to taste. You may wish to add a little caster sugar, I don't.
