Maple Walnut Tarts

1/4 pack short crust pastry or trimmings
1 egg yolk
30 grams caster sugar
2 tablespoons maple syrup
3 tablespoons cream
walnut pieces

Line 24 petit four baking tins with the pastry.

Whisk the egg yolk and sugar, stir in 1 tablespoon maple syrup and the cream.

Pour the custard into the pastry cases and bake 170oC for about 10 minutes until the pastry is lightly browned and custard set.

Cool on a rack. Before serving put into mini paper cases, drizzle with a little more maple syrup and decorate with chopped walnuts.
