Marmalade #2

5 Seville oranges
2 sweet oranges
1 large lemon
5 1/2 pounds sugar
7 pints water
Wash and dry the fruit. Cut into quarters. Remove pulp and pips and shred the peel thinly.
Put the peel into a large muslin bag and boil with the rest in the water until the volume is considerably reduced (NB: I would estimate half original volume).
Strain the liquid and add the cooked shredded peel and sugar. Stir until the sugar is dissolved and bring to the boil, stirring constantly.
Boil for half an hour then test for set. Remove from heat during the set test. Continue until a positive set is obtained. Bottle in suitable hot jars as for #1. Seal and label.
NB: These recipes are taken from an old cookery book, which must be nearly
50 years old. I would think that sufficient information is given to allow
variations to the recipes to be made keeping in mind the overall quantities of
ingredients. Substituting either Limes or Lemons, or both instead of Seville
Oranges keeping the quantities in mind could give marmalades for these fruits.
