Marinated Cheese

1/2 cup olive oil
1/2 cup white wine vinegar
3 tablespoons parsley -- chopped
3 tablespoons minced green onion
1 teaspoon granulated sugar
3/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon black pepper
3 cloves garlic -- minced
1 2oz jar pimento, (home made is best) -- diced
8 ounces sharp cheddar cheese -- chilled well
8 ounces cream cheese -- chilled

Combine the first 10 ingredients in a jar, shake well and set aside.

Cut the cheddar cheese lengthwise, then into slices about 1/4" thick (the aim being to end up with slices that are about 1x1)

Repeat this procedure with the cream cheese.

Stand the cheese slices on end in a shallow pan alternating the cheeses, pressing together lightly so they stick.

Pour the marinade over the cheese, cover and refrigerate for at least 8-10 hours.

Transfer to a serving tray and pour remaining marinade over them.
