Mashed Potatoes with Leeks

4 large potatoes -- peeled and cubed
2 ounces butter
1 large leek -- washed and chopped
3 fluid ounces cream
1 bunch chives or spring onion tops -- chopped
salt and pepper
Put the potatoes into a saucepan of lightly salted water and bring to the boil, simmer for about 15 minutes until the potatoes are tender.
Meanwhile, sauté the leeks in a separate pan with the butter.
When the potatoes are cooked, drain and mash, pass through a potato ricer or beat with an electric mixer until very smooth.
Add the cream, chopped herbs spring onions and sautéd leeks and combine well.
Check seasoning and serve,
NOTES : a floury type potato works best in this recipe
