Mediterranean Burgers

800 grams lean beef -- cubed
2 large spring onions, including green tops
60 grams sun-dried tomatoes, oil-packed
125 grams Buffalo mozzarella
small bunch basil -- chopped
small bunch thyme -- chopped
sea salt and ground black pepper

Process the beef until finely minced.

Finely chop the spring onions and sun-dried tomatoes.

Combine the beef, spring onions, sun-dried tomatoes and herbs thoroughly adding salt and pepper.

Divide the mixture into 8 equal portions and form into patties about 3" diameter.

Drain the mozzarella and divide into four, place a piece of mozzarella onto 4 of the patties.

Top each of the pieces of cheese with a patty enclosing the cheese thoroughly.

Refrigerate until required. 

Grill or BBQ to your liking.
