Mini Cheeseburgers

300 grams ground beef
cheese scraps, about 40 grams
1 teaspoon dried thyme
salt & pepper
4 crusts of bread from white loaf -- toasted
1/4 red onion -- sliced
2 tablespoons tomato ketchup
6 gherkins -- sliced lengthwise

Season the beef with salt and pepper and add thyme, combine well. Divide the beef into 16 equal portions and shape into balls.

Put a piece of cheese about the size of a frozen pea into each and shape into a round flat patty.

Heat a heavy bottomed pan.

Cut 16 circles approximately 1" in diameter. Spread thinly with ketchup.

Cook the beef for about 2 minutes on each side.

Place a beef patty on each round of bread. 

Top with gherkins and onion. Serve immediately.
