Mini Tart Tatins

230 grams puff pastry, made with butter -- rolled thinly
8 cherry tomatoes
3 mini goats cheeses
1 tablespoon basil leaves, shredded
olive oil
balsamic vinegar
black pepper

Cut the tomatoes in half. Drizzle a baking sheet with olive oil and balsamic vinegar.

Lay the tomatoes cut side down on the baking sheet at 3" intervals.

Top each tomato half with a small slice of goats cheese.

Cut 16 x 2 1/2 circles from the pastry. Tuck a pastry disc over each tomato half.

Bake at 220oC for about 8 minutes until the pastry is puffed and golden.

Carefully slide a palette knife under each pastry and remove to a serving plate tomato to the top.

Sprinkle with the basil and black pepper.

Serve either warm or hot.
