My Grandma's Banana Nut Bread

1/2 cup vegetable shortening
3/4 cup granulated sugar
1 large egg
4 teaspoons lemon juice
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed very ripe bananas (about 2-3)
1/2 cup walnuts -- coarsely chopped

Preheat Oven to 350oF (180oC Gas Mark 4)

Put shortening and sugar in a bowl and cream with an electric mixer until smooth. Beat in the egg and lemon juice.

Sift the flour, baking soda and salt together.

Fold the dried ingredients into the batter and blend well.

Stir in the bananas and walnuts.

Pour into a standard loaf pan (9" x 4" x 3") and baked for 60-70 minutes until a skewer inserted comes out clean. 

Turn on to a rack to cool.
