Nannas & Custard

50 grams dark brown sugar
30 grams butter
1 tablespoon cream
1 tablespoon Grand Marnier
1 large banana
3 egg yolks
25 grams caster sugar
1 vanilla pod
150 mls milk
150 mls cream
2 teaspoons cornflour (optional)
Put the brown sugar, butter, cream and liqueur (if using) into a pan and slowly bring to a simmer, cook gently until a thick caramel forms; slice in a banana and simmer gently while making the topping.
Beat the egg yolks with the sugar and vanilla pod. If using cornflour blend it with a couple of tablespoons of milk. Add to egg yolks.
Bring the milk and cream to the boil and pour onto egg yolks, blend well and return to pan stirring constantly until the custard begins to thicken.
Divide the banana and caramel between two ramekins.
Pour over the custard and chill for a few hours.
